CHOCOLATE ANGEL FOOD CAKE X 6 @ 1750C.
- 3.2 OZ SRONG FLOUR
- 1.9 OZ COCO POWDER
- 10.5 OZ GRANULATED SUGAR – DIVIDED
- 10.5 OZ EGG WHITES
- ¼ TSP SALT
- 1 ½ TSP CREAM OF TARTAR
- ¼ SCRAPED VANILLA POD
- 1/8 TSP ALMOND EXTRACT
SIFT TOGETHER FLOUR, COCO POWDER AND ½ SUGAR 3 TIMES.
WHISK WHITES, SALT AND CREAM OF TARTAR TO SOFT PEAKS.
SLOWLY ADD REMAINING SUGAR. WHISK UNTIL STIFF AND SHINY.
ADD VANILLA SEEDS AND ALMOND EXTRACT.
FOLD DRY INGREDIENTS INTO WHITES.
DIVIDE BATTER EVENLY AMONG 6 MOULDS.
BAKE 20 MINS OR UNTIL SKEWER IS CLEAN.
TIP UPSIDE DOWN AND LEAVE TO COOL FOR 1 HOUR.
